Strawberry Pie

I'm really new to this blog stuff and it may not be proper to post more than one a day but I just couldn't resist. Like the sub-title says this is ramblings and recipes and I just couldn't wait until tomorrow to share this one with anyone out there that may read my blog. And since strawberries are in season in my neck of the woods next month here goes.

Strawberry Pie (Preperation time only 15 minutes)

1 1/2 cups water
1 package Fat-Free/Sugar-Free Strawberry Jello
1 package Fat-Free/Sugar-Free "Cook & Serve" Vanilla Pudding (it must be cook & serve)
2 cups strawberries
1 graham cracker crust (store bought)

Combine Jello and pudding in a sauce pan.
Add water and mix.
Cook over medium heat stirring constantly until mixture becomes transluscent and thick.
While mixture cools a little, cut up strawberries into the pie shell.
Pour Jello mixture over strawberries and refrigerate until cold. (about 2 houors)
Add a dollop of Cool Whip Free and enjoy.
WW points=1 for 1/8 of a pie.

I can't believe it's only a point per slice. Is the crust a low-fat crust? Wow! It sounds awesome. I know you've told me about it before, but I still haven't tried it. I really gotta try it. I wonder how it would be with some rhubarbs in it along with the strawberries?

Nope the crust is just regular. The only calories and points come from the crust everything else is FREE! It would probably be great with rhubarb in it but you'd probably have to cook the rhubarb first. You can use any kind of fruit really. Just make sure that if you use a fruit high in sugar to count the points in it and add it to the points of the crust. I'll bet peach would be delicious too made with peach jello. Just adjust the jello to match the fruit.

Yum, this sounds good! I hope you keep posting recipes, someday I might venture to actually try them! :) I don't cook much, my hubby and I have a deal, he does the cooking and I do the laundry. We both think we have the better end of this deal... heh!

Uh ... okay, but do nightmares count? If so, I must be a genius, because I have lots of nightmares. But, in my nightmares, I'm always running away from people. I wonder if all that nightmare running counts as exercise? Weight loss nightmares ... :)

I made this pie last night and let me tell you, it was AWESOME. I let it set overnight and had a slice with my lunch today. OMG!!! I can't wait to eat more.

Now I wanna try it with other fruits too. I could do peach or pineapple or just about any flavor of jello that they have. I'll bet a lemon or lime pie wouldn't work, though. Too bitter.
