I made the rice pudding (click for the recipe) using soy milk and other substitutions and it turned out G-R-E-A-T!! I usually just buy soy milk because it is lighter in calories and higher in Omega-3's. I'm not crazy about drinking it like I am whole milk, but on cereal, in coffee and for cooking soy milk works fine.
What? Two posts in one day? And here I told y'all that I wasn't in the mood to post. Actually I'm still not much in the mood but I just had to share this recipe with you, in case you like rice pudding.

I love rice pudding, but soy milk is like licking a hippie!
Thanks for the recipe. I just bought light soy milk yesterday and I think I will try this recipe.
Sounds really good. I just bought Jello sugarfree rice pudding, but would be soooo much better if I made my own.
But I don't like rice pudding! Please bring me another recipe. :)
I do like soymilk. Soysilk Lt Vanilla on cereal can't be beaten!
Thanks for trying it out and sharing with us. Yummm. Sounds good!
Forgot to mention that I remember that little slogan!
Yummmmm
I Love rice pudding! Thanks for giving me the idea, got to try it again. I just use skim milk and still like it, even though it isn't as creamy as with full fat milk. I just got use to it made with the fat free. Might try to soy.
hmmmm I think I dont like rice pudding.
I may need to make and find out :)
Trying to catch up on blog reading. I love rice pudding but I would eat it all a one time. That is why I don't by the prepackaged rice pudding because I eat them all. I love HopeFool's take on soy milk.LOL
OMGosh! Licking a hippie! LOL! I don't like soy milk, my daughter does but i just can't get past the taste. I tried to use it in coffee even and just no way. Jinx!
Need your help. I made your rice pudding today. First of all it looks and tastes delish! But how many servings do you get out of yours? Mine made exactly 5 cups.
